Tasting Notes
VOVETI is a unique marriage between the viticulture of northern Italy’s most acclaimed Prosecco regions – reaching westward to Veneto, and the superb wine-making of eastern Friuli-Venezia Giulia. Here, a gentle-handed art crafts Italy’s most treasured white wines. With over 100 years
of family wine- making expertise and distinction, we present the promise of VOVETI, an ethereal bond of freshness, elegance and delectable depth.
Our Prosecco comes from predominately Veneto (Valdobbiadene, Vidor, Col San Martino) and is vinified from Friuli-Venezia Giulia (DOC). Grapes are hand-harvested late in September and transported to the winery in 10 liter lug boxes to protect them from bruising and pre-mature crushing. Blended from different base prosecco grapes and multi-sourced for complexity of flavors and textures.

Food Pairings
Pair with antipasti like prosciutto-wrapped melon, olives, toasted nuts and salumi, sushi and sashimi, or main dishes like Thai or Indian curry, shrimp kabobs and roast chicken.

Hand picked, multi-sourced fruit brought to winery in 10 kilo lug boxes. Gentle pressing of whole berry clusters. First fermentation in steel lasts 10 days at 12C (54F). Aging on lees lasts until winter. Second fermentation in steel at less then 14C (57F). Lees contact in surge tanks lasts
almost 4 months.
